Lunch- Cheap Chow

Today for lunch I finished off the fried rice. I like to occasionally eat rice with eggs. Throw a couple of over easy eggs on top of rice and mix it all up. You get a nice goey eggy ricey mix which is pretty good. Great for those times you are going to have rice for the 4th meal in 5 days.

Over easy is a great way to get salmonella. :(

Hermit, That is true. Suppose I could get salmonella from chocolate chip cookie dough also. Guess those are both part of my wild and dangerous lifestyle.

A popular traditional dish in Tampa, Florida's Ybor City Cuban districts is "cigar maker's lunch", which is nothing more than a couple fried eggs over yellow rice. It's really good with a side of black beans.

Wrap it in a tortilla with some cheese and sour cream - mmm...

Stephanie, I will have to try that one next time we make fried rice. With stuff where we make a whole bunch (rice, stew, etc) it tends to go in cycles. After eating something for a week strait you don't want it for a couple months.

Adding some protein like ham is great in the mix, too.
